The only ones I’ve made are:

    1. Open a can or two of coconut milk.2. Add sweetener of your choice to taste.3. Pour in ice cream maker.

I’d guess it would be even better if you made a custardand added some coconut and nuts and chocolatechips. And/or just add raw egg yolks.I have made custards with coconut milk …they are easier than cream (no skin), and ice creamthat starts with a good custard is rather good. Morework though. My “simple” recipe is fairly icy, notcreamy, which is how it usually is in Thai restaurants too.

But to answer question… yeah, you can in generalswap coconut milk for cream in most recipes (incl.cream sauces). Great for folks with casein issues.

I’m going to have to get me an ice cream maker one of these days!I make ice cream by stirring it every so often - works well but an ice creammaker is appealing. Thanks for the feedback. I think I’m going to make acoconut custard tonight!

I saw a “recipe” somewhere where they put the ice cream in a container, put thatin a bag withice cubes in salt and a little water, and just shook it or spun it aroundin a pillowcase. You can build up some muscle tonethat way …

Ooooh, curses on you people who have work environments that allow youto read this group all day long! I can’t be seen browsing the Web orreading long personal e-mails at work, so I have to catch up at nightand it’s a pain. Seems like a lot of people on this list have theluxury (and it is a luxury!) of getting paid to learn about nutrition.Gosh darn you all! ;)
